Fast Food Made Slow. May 24, 2016.
We've all got a fast food that we love even though we know it's bad for us, or just plain bad (hate chicken, perhaps?). So diva N invited the divas to take their favorite fast food and make their own less-greasy-but-equally-or-more-delicious version of it. Diva N's is, without a doubt, Wendy's spicy chicken sandwiches, so she served that up as the entree, and the divas did not disappoint with delicious homemade mozzarella sticks, cauliflower tots and hate chicken-inspired peach milkshakes.
Skinny Baked Mozzarella Sticks

Cut cheese sticks in half to give you 24 pieces. Place cheese in the freezer until frozen.
In a small bowl, whisk the egg. Place the flour in another small dish. In a third bowl, combine bread crumbs, panko, parmesan cheese, and dried parsley.
Dip the frozen cheese in flour, shaking off excess, then into the egg, then coat with the crumbs. Repeat, placing cheese sticks on a tray covered in waxed paper. Place the tray back in the freezer for at least one hour, until ready to bake. (This is a MUST or the cheese will melt before the crumbs get golden.)
When ready to bake, preheat oven to 400. Line a baking sheet with foil and lightly spray with oil. Place frozen cheese sticks on baking sheet, spray the tops of the cheese with a little more oil.
Bake in the bottom third of the oven until crisp, about 4-5 minutes. Turn and bake an additional 4-5 minutes. Watch closely to be sure they don't melt.

- 6 -8 cups vegetable oil
- 1⁄3cup frank's original red hot pepper sauce
- 2⁄3cup water
- 1 cup all-purpose flour
- 2 1⁄2teaspoons salt
- 4 teaspoons cayenne pepper
- 1 teaspoon fresh coarse ground black pepper
- 1 teaspoon onion powder
- 1⁄2teaspoon paprika
- 1⁄8teaspoon garlic powder
- 4 chicken breast fillets
- 4 plain hamburger buns
- 8 teaspoons mayonnaise
- 4 lettuce leaves
- 4 slices tomatoes
- Preheat 6 to 8 cups of oil in a deep fryer to 350 degrees.
- Combine the pepper sauce and water in a small bowl.
- Combine the flour, salt, cayenne pepper, black pepper, onion powder, paprika and garlic powder in another shallow bowl.
- Pound each of the chicken pieces with a mallet until about 3/8-inch thick. Trim each breast fillet if necessary to help it fit on the bun.
- Working with one fillet at a time, coat each piece with the flour, then dredge it in the diluted pepper sauce. Coat the chicken once again in the flour mixture and set it aside until the rest of the chicken is coated.
- Fry the chicken fillets for 8 to 12 minutes or until they are light brown and crispy. Remove the chicken to a rack or to paper towels to drain.
- As chicken is frying, prepare each sandwich by grilling the face of the hamburger buns on a hot skillet over medium heat. Spread about 2 teaspoons of mayonnaise on the face of each of the inverted top buns.
- Place a tomato slice onto the mayonnaise, then stack a leaf of lettuce on top of the tomato.
- On each of the bottom buns, stack one piece of chicken.
- Flip the top half of each sandwich onto the bottom half and serve hot.

Baked Cauliflower Tots
2 medium heads cauliflower, cut into florets
1/4 cup small diced onion
1/4 cup grated Parmesan cheese
1/4 cup finely ground breadcrumbs
1 large egg
Preheat oven to 350. Grease a nonstick cooking tray with cooking spray.
Bring a large pot of salted water to boil. Add the cauliflower florets and cook to fork-tender, about 5-10 minutes. Drain and transfer cauliflower to a food processor. Pulse a few seconds until florets break down to about the size of grains of rice.
Measure out 3 packed cups of cauliflower and add it to a large bowl. Stir in remaining ingredients. (Mixture should be the consistency of mashed potatoes.) Using your hands, scoop 1-2 tablespoons of mixture and mold into tater tot shapes. Place on baking sheet and repeat (over and over and over). Space tots about 1 inch apart.
Bake about 20 minutes, flipping them carefully and baking them 10-15 minutes more to crisp.

Copycat Chick-fil-A Peach Milkshake
Ingredients
- 3 Scoops of vanilla ice cream
- 1 cup crushed ice
- 3/4 cup whole milk
- 1 tsp vanilla extract
- 1/4 cup tropical juice
- 2 peaches cut in pieces and peeled
- whipped cream
- maraschino cherries
Add ice cream, ice, milk, vanilla, and tropical fruit juice to the blender.
Now, add your cut peaches.
Puree all ingredients together in a blender until smooth without chunks.
