The official cocktail of the British Virgin Islands and one the most popular mixed drinks in the Caribbean. 4 oz. pineapple juice 1 oz. cream of coconut 1 oz. orange juice 2-4 oz. of dark rum Grated fresh nutmeg In a cocktail shaker filled with ice add first three ingredients and shake. Pour rum into cocktail glasses, followed by juice mixture, and top with grated nutmeg. Serves 1-2. |

- Batter:
- 3 1/4 cups all-purpose flour
- 4 teaspoons baking powder
- 2 teaspoons ground cinnamon
- 1 teaspoon ground nutmeg
- 1/2 teaspoon ground allspice
- 1 pinch salt
- 1 egg
- 1 cup milk
- 1/3 cup beer (such as Heineken®)
- 1 3/4 cups brown sugar
- 1/2 cup melted butter
- 1 teaspoon browning sauce
- 1 teaspoon vanilla extract
- 1 teaspoon lime juice
- 1 cup raisins
- Glaze:
- 1/2 cup brown sugar
- 1/2 cup water
- Preheat an oven to 325 degrees F (165 degrees C). Grease two 8x4-inch loaf pans.
- Whisk the flour, baking powder, cinnamon, nutmeg, allspice, and salt together in a bowl; set aside. Beat the egg in a mixing bowl; whisk in the milk, beer, and 1 3/4 cups of brown sugar until the brown sugar has dissolved. Stir in the butter, browning sauce, vanilla extract, and lime juice until blended. Add the flour mixture and raisins. Stir until no dry lumps remain. Pour the batter into the prepared loaf pans.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour.
- When the bread is nearly finished, combine 1/2 cup brown sugar and the water in a small saucepan. Bring to a boil over high heat and boil until the sugar is thick and syrupy, about 5 minutes. Pour the glaze over the bread once it's done; return the bread to the oven and bake 5 minutes longer. Cool in the pans for 5 minutes before turning out onto a wire rack to cool completely.
- Recommended to serve with cheese (cheddar).
Spicy Green Curry–Cilantro Shrimp

1 cup light coconut milk
2 tablespoons sugar
2 tablespoons fresh lime juice (about 1 lime)
1 tablespoon green curry paste
1 teaspoon cornstarch
1/4 teaspoon salt
1/3 cup chopped fresh cilantro
Lime wedges
Preparation
1. Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add shrimp; cook 3 minutes, stirring occasionally.
2. While shrimp cook, combine coconut milk and next 5 ingredients, stirring with a whisk until smooth. Add to shrimp in pan; bring to a boil. Reduce heat; simmer 5 minutes or until slightly thickened. Sprinkle with cilantro; serve with lime wedges.

- 6 ripe plantains, peeled and halved cross-wise
- 1-2 tbs melted butter or oil, use as little as you want
- 6 thick slices of cheese (the recipe called for mozzarella, but I used a Mexican melting cheese)
Instructions
- Pre-heat oven to 400 F
- Place plantains on a baking sheet and rub them with butter or oil.
- Bake the plantains for 30 minutes, then turn each one and bake for another 15-20 minutes or until golden on both sides.
- Remove the plantains from the oven, made a horizontal slit on the middle of each , and stuff them with the cheese slices.
- In a few minutes the cheese will have melted, serve immediately, with or without hot sauce.

Ingredients
- 4 ajies or hot peppers
- ½ bunch of cilantro (stems and leaves)
- ½ cup of water
- 3 garlic cloves
- Juice from ½ lime or lemon
- 3 tbs finely chopped white onion (scallions can also be used)
Instructions
- Combine the hot peppers, cilantro, water, garlic cloves and lime juice in the blender or food processor and blend well.
- Add the chopped white onions or scallions and salt to taste.
